Do you test for mold?

The coffees that are produced by Mt. Comfort Coffee are handled under the strictest of guidelines. Every effort is given to reduce and eliminate any contamination by moisture that will allow contact with the spores that produce mycotoxins. We do not currently test any of our coffee, but we have found that coffees that are fully washed and either mechanically or sun dried (like ours) are significantly less prone to have mycotoxins.

Here is our process:

After harvest, our coffees are mill and processed. Once they are cleaned, they are either sun dried or mechanically dried and then stored in silos where the moisture level is reduced to 10-12%. After drying, the coffees are transported in odor free containers that are also free of damage that might let moisture in. Once they are imported, our coffees are typically roasted at temperatures above 400 degrees Fahrenheit.

All that said, we cannot guarantee that our products are mold or mycotoxin free.
